Maintaining protein functionality supports water-holding capacity, while controlling oxidation and processing conditions helps preserve uniform color and overall product appeal.

Microbial Safety and Shelf Life: In low-sodium meat, poultry, and seafood products, reducing sodium increases the amount of available moisture in the system, which can promote microbial growth and shorten shelf life. Maintaining proper water binding is essential to limit available moisture, support microbial stability, minimize purge, and preserve overall product quality over time.
